Pound the garlic and chillies together in a mortar and pestle until they form a paste, then add the long beans and carrots, gently bruising them slightly to release their flavours without breaking them apart. In the mortar, combine the lime juice, fish sauce and palm sugar, stirring until the sugar dissolves completely. Add the shredded papaya to the mortar and gently toss everything together using a pestle and spoon, bruising the papaya lightly to allow it to absorb the dressing. Transfer the mixture to a serving bowl and fold through the cherry tomatoes, dried shrimp and most of the peanuts, adjusting the seasoning with salt if needed. Serve immediately garnished with the remaining crushed peanuts and fresh coriander leaves.
