Make the dough by mixing flour and salt, then gradually add warm water and oil, kneading until smooth and elastic; let rest for 30 minutes covered. Prepare the filling by combining crumbled curd cheese, beaten eggs, sugar and salt until well incorporated. Divide dough into two portions and roll each very thin on an oiled surface. Place the first sheet in a greased rectangular baking dish, spread the cheese filling evenly over it, then top with the second dough sheet, tucking edges down. Brush the top generously with melted butter and score into squares with a sharp knife. Bake in a preheated 190°C oven for 40-45 minutes until golden brown and crispy. Cool for 10 minutes before serving warm or at room temperature.
