Mix flour, yeast, salt, sugar and olive oil with warm water to form a soft dough, then knead for 10 minutes until smooth and elastic. Cover and prove for 1 hour until doubled in size. Divide into 8 equal pieces and roll each into a long rope approximately 40cm in length. Form each rope into a ring, pressing the ends together firmly. Mix molasses with 100ml water in a shallow bowl and spread sesame seeds on a plate. Dip each simit ring into the molasses mixture, then immediately coat thoroughly in sesame seeds, pressing gently to adhere. Place on oiled baking trays, cover lightly and prove for 30 minutes. Bake at 220°C for 20-25 minutes until golden brown and crispy, rotating the trays halfway through cooking for even colouring.
