Cook soba noodles according to packet directions, drain and rinse with cold water, then set aside. Whisk together soy sauce, rice vinegar, mirin, wasabi and grated ginger to make the dressing. Pat tuna steaks dry with kitchen paper, season with salt and pepper, then coat both sides evenly in sesame seeds. Heat olive oil in a high-heat frying pan until smoking, sear tuna steaks for 90 seconds on each side for medium-rare, then slice into strips. Warm edamame according to packet instructions. Toss soba noodles with half the dressing, divide between plates, top with sliced tuna, edamame, sliced cucumber and spring onions, then drizzle with remaining dressing and garnish with crumbled nori.
