Method

Sift together the flour, baking powder and salt into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs, then stir in the sugar. Make a well in the centre and pour in the milk, mixing gently with a wooden spoon until a soft dough forms. Turn the dough onto a lightly floured surface and gently knead until smooth, then roll out to approximately 1cm thickness. Cut into rounds using a 7cm cutter or into triangular wedges. Heat a cast iron griddle or heavy frying pan over a medium heat, lightly butter it, then cook the bannocks for 4-5 minutes on each side until golden brown and cooked through. Serve warm with butter and jam or honey.
