Method

Preheat oven to 200°C. Halve the new potatoes and toss with 1 tbsp olive oil, salt and pepper; spread on a baking tray and roast for 20 minutes until tender. Meanwhile, mix breadcrumbs, parsley, dill, lemon zest, Parmesan, salt and pepper in a bowl. Pat cod fillets dry and place on the tray with potatoes, brush each fillet with mustard then press the herb mixture firmly onto the top of each. Drizzle with remaining olive oil and bake for 12–14 minutes until the crust is golden and cod flakes easily. Serve immediately with lemon wedges.
