Method

Mix the wholemeal flour and salt together in a large bowl. Gradually add the water whilst mixing with your fingers until a soft dough forms, then knead for about 5 minutes until smooth and pliable. Add the oil, knead again until incorporated, then cover and leave to rest for 15-20 minutes. Divide the dough into 8 equal portions and roll each into a ball, then flatten and roll out on a lightly floured surface into thin circles about 18cm in diameter. Heat a dry frying pan or tawa over a medium-high heat and cook each chapati for about 30 seconds, then flip and cook the other side for another 30 seconds until light brown spots appear. Brush lightly with oil and serve warm.
