Method

Cut the cooked chicken into bite-sized pieces and place in a large bowl. In a separate bowl, whisk together the mayonnaise, yoghurt, curry powder, mango chutney, apricot jam and lemon juice until smooth and well combined. Fold the curry dressing gently through the chicken until evenly coated. Season with salt and pepper to taste. Just before serving, fold through most of the flaked almonds and sultanas, reserving some for garnish. Slice the spring onions and scatter over the top along with the remaining almonds and sultanas.
