Method

Soak the bacon in cold water for 2 hours to remove excess salt, then drain well. Place the bacon in a large pot and cover with fresh water, bring to the boil and skim any foam from the surface. Add the bay leaves and peppercorns, then simmer gently for 45 minutes. Meanwhile, peel and quarter the potatoes, carrots and onions, and roughly chop the cabbage. Add the vegetables to the pot and continue simmering for a further 30-40 minutes until the bacon is tender and the vegetables are cooked through. Remove the bacon to a warm plate and let it rest, then serve sliced alongside the boiled vegetables with the cooking liquor as a light broth. Accompany with mustard or parsley sauce if desired.
