Combine cornmeal, flour, salt, sugar and baking powder in a large mixing bowl. Whisk together milk, eggs and 2 tbsp oil in a separate bowl until well combined. Pour the wet ingredients into the dry mixture and stir until you have a thick batter with no lumps. Heat 200ml oil in a heavy-bottomed frying pan or skillet to approximately 170 degrees Celsius until a small drop of batter sizzles immediately. Using two spoons or an ice cream scoop, carefully drop generous spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon to create rough, irregular patties. Fry for 2-3 minutes on each side until golden brown and crispy on the outside. Drain on kitchen paper and serve hot with butter, honey, or a savoury topping such as salt fish or callaloo.
