Dice the bacon and cook in a heavy-bottomed pot over medium-high heat until crispy, then remove and set aside. In the same pot with the bacon fat, sauté the diced onion and minced garlic until softened and fragrant, about 3 minutes. Add the okra and cook for 5 minutes, stirring occasionally to prevent excessive sliminess. Pour in the tinned tomatoes with their juice, then add the Cajun seasoning, cayenne pepper, thyme, salt and black pepper. Reduce heat to medium and simmer for 15-20 minutes, stirring occasionally, until the okra is tender and the flavours have melded. Return the crispy bacon to the pot, adjust seasoning to taste, and serve hot.
