Heat 2 tablespoons of butter in a large pan and soften the onions until translucent, then add the minced lamb and cook until browned, breaking it into small pieces. Stir in the parsley, dill, pine nuts, salt and pepper, then remove from heat and allow to cool completely. Brush a baking tray with melted butter and layer three filo sheets, brushing each with butter. Spread half the meat mixture evenly over the filo, then layer three more buttered filo sheets on top. Spread the remaining meat mixture over this layer, then finish with three final buttered filo sheets. Brush the top generously with remaining butter, cut into triangular or rectangular portions with a sharp knife, and bake at 190 degrees Celsius for 35-40 minutes until golden brown and crisp. Serve hot or warm.
