Heat the oil in a heavy-bottomed pan over medium heat and fry the diced onions until golden, approximately 5 minutes. Add the minced garlic and grated ginger, cooking for 2 minutes until fragrant, then add the fresh chillies and cook for 1 minute. Stir in the ground cumin, coriander, turmeric, and chilli flakes, toasting the spices for 1 minute to release their aromas. Add the chopped tomatoes and cook for 8-10 minutes until they break down and the oil begins to separate from the mixture. Cut the goat cheese into bite-sized cubes and gently add to the pan along with the coconut milk, then simmer for 5-7 minutes on low heat, being careful not to break up the cheese. Season with salt to taste and garnish with fresh coriander leaves before serving with steamed rice or buckwheat.
