Method

Bring a large pot of water to a rolling boil and dissolve the sea salt thoroughly. The water should taste like the sea. Place the mud crabs in the freezer for 15 minutes to make them unconscious before cooking. Carefully place the crabs into the boiling salted water, cover, and cook for 18-20 minutes for crabs weighing around 1 kg each. Remove the crabs with tongs and allow to cool slightly until you can handle them. Crack the claws and body, extract the sweet white meat, and serve warm with melted butter infused with lemon juice, fresh coriander, and cracked black pepper.
