Method

Boil potatoes until tender, then peel and mash with butter, milk and egg yolks until smooth, seasoning with salt and pepper. Heat oil in a frying pan and sauté onion and garlic until softened, then add ground beef and cook until browned, stirring in sofrito, tomato sauce, olives and raisins, and simmer until the mixture thickens. Form the potato mixture into oval shapes, press a small indent into each one, fill with a spoonful of the meat mixture, then seal carefully. Dust each relleno with flour, dip in beaten egg, then fry in hot oil until golden brown on all sides. Drain on kitchen paper and serve hot with tomato sauce or additional sofrito on the side.
