Add the diced potatoes, carrots, and celery root, then pour in the fish stock and bring to a boil. Season with salt, pepper, and bay leaves, then reduce heat and simmer for 15 minutes until vegetables begin to soften. Gently add the fish chunks and continue simmering for 10-12 minutes until the fish is cooked through and flakes easily. Taste and adjust seasoning as needed, then serve hot garnished with fresh parsley.
