Combine the semolina, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk together the melted butter, milk and egg until well combined. Pour the wet ingredients into the dry ingredients and mix gently until a thick dough forms, adding more milk if necessary to achieve a consistency similar to porridge. Let the dough rest for 15 minutes at room temperature. Heat butter in a large frying pan over medium heat. Divide the dough into 8 portions and gently flatten each into a thick disc about 8cm across. Fry for 3-4 minutes on each side until golden brown and cooked through. Serve warm with honey, butter or jam.
