Method

Rinse the dried hibiscus flowers under cold water to remove any dust. Bring 1 litre of water to the boil in a large pan and add the hibiscus flowers, then remove from heat and let steep for 10-15 minutes until the liquid becomes deep red and the flowers have softened. Strain the mixture through a fine sieve, pressing gently on the flowers to extract all the liquid, then discard the solids. Stir in the caster sugar whilst the liquid is still warm until fully dissolved, then add the fresh lime juice and allow to cool to room temperature. Chill thoroughly in the refrigerator for at least 2 hours, then serve over ice in tall glasses.
