Method

Preheat the oven to 200°C and line a large baking tray with baking paper. In a large bowl, combine the minced turkey, diced onion, garlic, fresh herbs, spices, egg and breadcrumbs, mixing gently until just combined. Divide the mixture into 12 equal portions and mould each around a skewer (or shape into sausages), compacting firmly. Arrange the koftas on the prepared tray, lightly spray with olive oil, and bake for 18–20 minutes until cooked through and golden. Serve with lemon wedges, Greek yoghurt, and a crisp salad for a balanced meal.
