Method

Heat the oil in a heavy-bottomed pot and soften the onions and garlic over medium heat until fragrant, about 3 minutes. Stir in the tomato puree and cook for 1 minute, then add the fresh tomatoes, green chilli, and rice, stirring well to coat the rice in oil. Pour in the hot stock and season with salt and pepper, then bring to a boil. Reduce the heat to low, cover with a tight-fitting lid, and simmer undisturbed for 18-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let rest for 5 minutes with the lid on, then fluff with a fork and stir through the fresh coriander before serving.
