Heat olive oil in a large heavy-bottomed pot over medium-high heat and brown the diced pork in batches, removing and setting aside once golden. Sauté the onion and garlic with cumin and oregano until fragrant, about 3 minutes. Return the pork to the pot, add the diced potatoes, stock, bay leaf, salt and pepper, then bring to a boil. Reduce heat to low and simmer for 45-50 minutes, stirring occasionally, until the pork is tender and potatoes are breaking down into a thick, stew-like consistency. The dish should be hearty and slightly chunky, not a smooth purée. Serve hot as a breakfast dish, traditionally with Cuban bread and black coffee.
