Add the long beans and green papaya, cooking for 5-6 minutes until the vegetables begin to soften but retain some bite. Stir in the tomato quarters and cook for another 2 minutes. Season with fish sauce, lime juice, salt, and sugar, adjusting to achieve a balanced sour, salty, and slightly sweet profile. Remove from heat, garnish with fresh coriander, and serve immediately in bowls.
