Method

Make the batter by sifting flour into a bowl with salt and pepper, creating a well in the centre and whisking in eggs and milk until smooth, then set aside for 30 minutes. Preheat the oven to 220°C and place a large roasting tin inside with the oil to heat until smoking. Arrange the sausages in the hot tin and return to the oven for 5 minutes until beginning to brown. Pour the batter carefully around the sausages and bake for 25-30 minutes until the batter is puffed, golden brown and set. Serve immediately whilst still risen, with onion gravy and mashed potatoes.
