Method

Cream together butter and caster sugar until pale and fluffy, then beat in eggs one at a time. Fold in the sour cream and vanilla extract gently. In a separate bowl, whisk together flour, baking powder and salt, then fold into the wet mixture until just combined. Pour half the batter into a greased 23cm cake tin, spread a layer of jam over it, then top with remaining batter. Bake at 180°C for 35-40 minutes until a skewer inserted comes out clean. Allow to cool before dusting generously with icing sugar. This traditional Lithuanian sweet cake is best served slightly warm with tea or coffee.
