Peel the potatoes and cut them into even-sized pieces, approximately 3-4 cm cubes, to ensure uniform cooking. Place the potatoes in a large pot of cold salted water and bring to the boil, then reduce heat and simmer for 12-15 minutes until they are tender when pierced with a fork. Drain the potatoes thoroughly and return them to the pot. Add the butter and gently toss the warm potatoes until evenly coated, then season with salt and black pepper to taste. Transfer to a serving dish and garnish generously with freshly chopped parsley just before serving.
