Roast the vegetables instead of boiling them. The dry heat concentrates their sugars and deepens their flavour — you're after the sweet, nutty base that separates this from thin vegetable stock. Peel and cut the squash, potatoes, carrots, and onion into roughly 3 cm chunks; size matters here because uneven pieces cook unevenly. Toss them with a pinch of salt in an oven-safe pot (cast iron is ideal for heat retention) and roast at 200°C for 35–45 minutes. You're looking for golden-brown edges and a yielding centre when pierced with a knife — the vegetables should be collapsing slightly, not just soft.

Pour 1 cup of water into the pot and crumble the stock cube directly over the hot vegetables. The residual heat will dissolve it immediately. Scrape the caramelised base with a wooden spoon — this fond holds concentrated flavour. Simmer on the stovetop for 10 minutes to marry the flavours. If the liquid level drops noticeably, add another 150 ml water; you want enough stock to blend smoothly without adding milk right away. The ratio of vegetables to liquid controls the final consistency — too much water dilutes the roasted depth you've built.

Pass the mixture through a blender in batches. Add the milk gradually whilst blending, starting with half a cup. The pureeing action is your technique here — a smooth blender beats an immersion blender for this soup because the blade action incorporates air and emulsifies the fats from both vegetables and milk, creating a silky mouthfeel. If you only have an immersion stick, blend longer and accept a slightly grainier texture. Taste once everything is incorporated; the milk will have diluted the seasoning, so adjust salt and pepper aggressively now rather than at the table. A white soup that tastes muted is a failure — it should taste of squash first, then comfort.

Pour into bowls. A knob of cold butter melting into the surface adds richness without heaviness. A grind of black pepper and a whisper of aromatic-vegetables|aromatic crisp fried sage leaf makes this serving-ready.
