Maque choux is a cajun-cuisine braise where corn's own starch thickens the cooking liquid into a creamy sauce — you're relying on the kernel's moisture and the abraded cob to build body. Don't skip the scraping step. Using the spine of a knife, work lengthwise down each ear after cutting away the kernels; you're after the milky pulp that stays behind, which contains both starch and flavour. This juice is the foundation.

Heat a wide, heavy-bottomed pot over medium heat and add your fat — lard or bacon grease works best, though butter will do — until it shimmers. Add the onion and bell pepper, both chopped fine. aromatic-vegetables|Sweat these for five to six minutes, stirring regularly, until they collapse and the raw bite vanishes. You want them translucent at the edges. Add the tomatoes now, along with the corn kernels and the scrapings from the cob. Stir once through to coat everything in fat.

Pour in roughly 200ml of water — this seems sparse, but the corn releases considerable liquid as it heats, and you're building stewing|a braise, not a soup. Season with salt and a quarter-teaspoon of sugar (the tomato and corn are already sweet; the sugar amplifies rather than adds). Grind black pepper over the top. Cover the pot and lower the heat to medium-low. The surface should bubble gently at the edges, not at a rolling boil.

Cook for 35 to 40 minutes, stirring every ten minutes or so. The mixture will look broken and soupy at first; watch for the moment when the liquid thickens and clings to the corn — the starch from the cob and kernels has done its work, creating the characteristic creamy texture. If after 40 minutes it's still loose, uncover and simmer for another five to eight minutes to allow excess water to evaporate. The finished dish should coat the back of a spoon without running.

Taste for salt and adjust. Serve warm, direct from the pot, as a side to grilled fish or chicken. It holds well and can be reheated gently with a splash of water if needed.
