Heat a wok or large frying pan over high heat until smoking, then add 1 tablespoon of vegetable oil. Stir-fry the sliced chicken until cooked through, then add the prawns and cook until they turn pink. Push the protein to the side, add the remaining oil and minced garlic, stirring briefly until fragrant. Add the fresh rice noodles, breaking them apart gently with your spatula as they heat through. Pour in the soy sauce, oyster sauce and sesame oil, tossing constantly to coat the noodles evenly for 2-3 minutes. Finally, add the spring onions, bean sprouts and chives, tossing everything together for 1 minute. Season with white pepper and serve immediately while the noodles are still hot.
