Method

Heat a tall glass or Irish coffee mug by pouring in hot water and leaving for one minute, then empty and dry. Pour the hot coffee into the warmed glass and stir in the muscovado sugar until dissolved. Add the Irish whiskey and stir well. Whip the double cream lightly until it reaches a soft, pourable consistency, then carefully pour it over the back of a warm spoon held just above the coffee surface so it floats on top. Finish with a tiny pinch of sea salt sprinkled over the cream and serve immediately.
