Toast the Sichuan peppercorns in a dry pan for 30 seconds, then crush lightly. Divide the cooked noodles between bowls, top with the pork mixture, pour the warm sauce over, and sprinkle with crushed peppercorns, peanuts, spring onions, and coriander.
