Preheat the oven to 160°C and line an 8-inch square tin with baking parchment. Mix the oatmeal, flour, ginger, cinnamon and salt together in a large bowl. Warm the treacle, butter and sugar gently in a saucepan until melted, then stir in the baking soda until foaming. Pour the wet ingredients into the dry mixture and stir thoroughly until well combined. Transfer the mixture to the prepared tin, smooth the top, and bake for 45-50 minutes until a skewer inserted in the centre comes out clean. Allow to cool in the tin for 15 minutes, then turn out onto a wire rack to cool completely. Once cooled, wrap and store for 2-3 days before eating, as parkin improves with keeping and becomes stickier and more moreish.
