Bring the water to a boil in a large, heavy-bottomed saucepan and add the salt. Gradually sprinkle the maize meal into the boiling water whilst stirring constantly with a wooden spoon to avoid lumps forming. Reduce the heat to low and continue stirring thoroughly for about 15-20 minutes until the mixture becomes thick and starts to pull away from the sides of the pan. The ugali should be stiff and difficult to stir. Stir in the butter and mix well. Transfer to a serving plate and shape into a mound using a dampened wooden spoon or wet hands if preferred. Serve hot alongside relish, vegetables, or a sauce such as sukuma wiki or a rich stew.
