Finely chop the onion and cook gently in 20g butter until softened, then add the spinach and cook until wilted and any excess moisture has evaporated, about 5 minutes. Crumble the feta cheese into a bowl, add the cooked spinach mixture, beaten eggs, salt, pepper and nutmeg, mixing thoroughly. Preheat the oven to 200°C and brush a rectangular baking tin with melted butter. Layer four filo sheets into the tin, brushing each with melted butter between layers, then spread the spinach and cheese filling evenly over the top. Layer the remaining four filo sheets on top, again brushing each with butter, tucking the edges down the sides of the tin. Score the surface into serving portions and bake for 30-35 minutes until golden brown and crisp. Allow to rest for 5 minutes before cutting and serving hot.
