Method

Cream together the butter and caster sugar until light and fluffy, then beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the plain flour, cocoa powder, baking powder and salt. Fold the dry ingredients into the butter mixture until just combined, then fold in the chocolate chips. Drop spoonfuls of the dough onto lined baking trays, spacing them about 5 centimetres apart. Bake at 180°C for 10-12 minutes until the edges are set but the centres remain slightly soft. Allow the biscuits to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
