Method

Cut the halloumi cheese into slices approximately 5mm thick or into rectangular batons. Lightly dust each piece with flour on both sides, shaking off any excess. Heat the olive oil in a large frying pan over a medium-high heat until it shimmers. Once hot, carefully place the floured halloumi into the pan and fry for 2-3 minutes on each side until golden brown and a slight crust forms; the cheese should soften but retain its shape. Transfer to a serving plate, immediately squeeze fresh lemon juice over the warm cheese, and season generously with sea salt, black pepper and oregano. Serve immediately while still warm and melted inside.
