Mix flour and salt in a bowl, then gradually add warm water whilst stirring until a soft dough forms. Knead for 8-10 minutes until smooth and elastic, then divide into 4 portions and roll into balls. Cover with a damp cloth and rest for 30 minutes. Heat a griddle or frying pan over medium-high heat. Meanwhile, combine spinach, feta, onion, mint, salt and pepper in a bowl. Roll each dough ball very thin on a floured surface until almost transparent. Place a quarter of the filling on one half of the dough, fold in half, then seal the edges gently. Cook each gozleme on the hot griddle for 2-3 minutes per side until golden and crispy, brushing lightly with olive oil during cooking. Serve warm, optionally folded or cut into quarters.
