Method

Heat the oil in a large pot and brown the cubed meat on all sides, then remove and set aside. In the same pot, sauté the chopped onions until softened, about 5 minutes. Return the meat to the pot and add the stock and water, bringing to a boil before reducing to a simmer. Add the potatoes and carrots, and continue simmering for 45 minutes until the meat is tender and vegetables are cooked through. Season generously with salt and pepper, then finish with fresh dill or parsley just before serving. Serve hot as a hearty main course soup.
