Preheat your oven to 200°C and lightly butter a baking tray. Slice the bolillo rolls in half lengthways and spread a generous layer of refried beans on each half. Top each with a mixture of grated cheddar and sliced oaxaca cheese, then scatter jalapeño slices over the cheese. Bake for 10-12 minutes until the cheese is melted and bubbling. Remove from the oven and sprinkle with fresh coriander, then serve immediately with warm salsa on the side or drizzled over the top.
