Make a dough with flour, salt, egg and water, kneading until smooth and elastic, then let it rest for 30 minutes. Boil and mash the potatoes, then mix with curd cheese, finely diced sautéed onion, parsley, salt and pepper. Roll the dough very thin on a floured surface and spread the filling over it evenly, leaving a border. Roll the dough tightly from one long end to create a log, then coil it into a spiral. Place on a buttered baking tray and bake at 200°C for 40-45 minutes until golden brown. Meanwhile, brown the remaining butter with breadcrumbs or caramelised onions. Serve the štruklji hot, drizzled with the browned butter and accompanied by soured cream.
