Heat oil in a large wok or heavy-bottomed pan over high heat until smoking. Working in batches, sear the beef slices for 1-2 minutes per side until browned, then set aside. Reduce heat to medium, add half the butter and cook the shallots until softened and caramelised, about 4 minutes. Add the minced garlic and cook for another minute until fragrant. Return the beef to the pan and add the remaining butter, fish sauce, soy sauce, and sugar, tossing everything together for 2-3 minutes. Season with black pepper and finish with fresh coriander leaves. Serve immediately with jasmine rice.
