Method

Mix the beef mince with finely chopped onion, garlic, parsley, salt, pepper and paprika until just combined, being careful not to overwork the meat. Divide the mixture into four equal portions and shape each into a thick patty about 12cm across and 2cm thick. Heat oil in a large frying pan over medium-high heat and cook the patties for 4-5 minutes per side for medium doneness, pressing gently with a spatula. Toast the bread rolls lightly, then spread ajvar on both halves. Assemble the burgers by layering lettuce, tomato, onion rings and the cooked patty in each roll. Serve immediately while the patties are still warm.
