Method

Mix the flour, salt, and yeast together in a large bowl. Add the warm water and olive oil, then knead for 10 minutes until smooth and elastic. Cover and leave to rise for 1-2 hours until doubled in size. Divide the dough into 8 equal pieces and shape into balls, then flatten slightly and leave to rest for 20 minutes. Heat a heavy-bottomed frying pan or baking stone over a high heat until very hot. Place each piece of dough on the hot surface and cook for 2-3 minutes per side until puffed and lightly golden. Wrap in a clean tea towel to keep warm and soft whilst cooking the remaining breads.
