Sift together flour, sugar, baking powder and salt in a large bowl. In a separate bowl, whisk eggs with milk and vanilla extract until combined. Melt the butter and add to the wet ingredients, stirring until smooth. Gently fold the wet ingredients into the dry mixture until just combined, leaving some small lumps for a lighter texture. Preheat your waffle iron and brush lightly with butter. Pour batter into the centre of the hot waffle iron, filling about three-quarters full, and cook until golden and crisp, approximately 3-4 minutes depending on your machine. Serve immediately while still warm.
