Heat the oil in a heavy-bottomed pan over medium heat and fry the sliced onions until soft and translucent, about 3-4 minutes. Add the minced garlic and sliced chilli, stirring constantly for 1 minute until fragrant. Add the chopped spinach in batches, stirring well until wilted, then pour in the water and simmer for 5 minutes. Once the spinach is tender, add the cubed cheese and stir gently until it begins to soften and partially melt into the greens, about 2-3 minutes. Season with salt and pepper to taste and serve hot as an accompaniment to rice or other main dishes.
