Mix flour and salt in a large bowl, then gradually add water and oil, stirring until a soft dough forms. Knead the dough for 5-10 minutes until smooth and elastic. Divide the dough into 12 equal pieces and roll each into a ball, then leave to rest for 15 minutes. On a lightly floured surface, roll each ball into a very thin, round disc approximately 6-8mm thick. Heat a large griddle or frying pan over medium-high heat and cook each flatbrød for 1-2 minutes per side until lightly speckled and puffed. Stack the warm flatbrøð in a cloth to keep them soft and pliable.
