Combine olive oil, lemon juice, minced garlic, oregano, salt and pepper in a large bowl to create the marinade. Add the pork cubes and stir thoroughly to coat evenly, then cover and refrigerate for at least 4 hours, preferably overnight. If using wooden skewers, soak them in water for 30 minutes. Thread the marinated pork onto skewers, alternating with chunks of red onion and red pepper. Heat a barbecue grill or griddle to high heat and cook the souvlaki for 10-12 minutes, turning regularly every 2-3 minutes, until the pork is cooked through and has a golden charred exterior. Serve immediately with warm pitta bread, tzatziki sauce, lemon wedges and a simple tomato and cucumber salad.
