Method

Peel and dice the mango into bite-sized cubes, then thinly slice the red onion and roughly chop the fresh coriander. In a small bowl, whisk together the juice of two limes, olive oil, fish sauce, and chilli flakes to make the dressing, seasoning with salt and pepper. Arrange the salad leaves on two plates and top with the mango, prawns, red onion, and coriander. Pour the dressing over each salad and toss gently to combine, ensuring the prawns are evenly coated. Serve immediately whilst the salad is fresh and chilled.
