Method

Soak the dried fish in cold water for 24 hours, changing the water several times, then drain and cut into chunks. Peel and cube the potatoes and onions into similar-sized pieces. Bring fresh water to the boil in a large pot and add the drained fish, bay leaf and peppercorns, simmering gently for 20 minutes. Add the potatoes and onions along with butter and salt, then continue simmering for a further 30-40 minutes until the potatoes are tender and the fish is fully cooked. The stew should have a hearty, broth-like consistency. Serve hot in deep bowls, ensuring each portion has good pieces of fish and potato.
