Method

Heat olive oil in a large saucepan over medium-high heat and brown the ground turkey, breaking it into small pieces, for 5-7 minutes until cooked through. Add diced onion, garlic, and red pepper, cooking for 3 minutes until softened. Stir in chilli powder, cumin, and tomato purée, cooking for 1 minute to toast the spices. Add tinned tomatoes, drained black beans, and beef stock, then simmer uncovered for 20-25 minutes, stirring occasionally, until thickened. Taste and season with salt and black pepper as needed. Serve hot, optionally garnished with fresh coriander or a dollop of Greek yoghurt.
