Source fresh witchetty grubs from authorised Indigenous suppliers or farming operations. Clean the grubs gently under cool water and pat dry with kitchen paper. Heat a cast iron skillet or barbecue hotplate over medium-high heat and add the butter or native oil until foaming. Place the grubs directly onto the hot surface and cook for 3-4 minutes until the exterior turns golden and crispy, turning occasionally for even cooking. Season with sea salt and native pepper leaf if available. Serve immediately whilst still warm, as a protein-rich dish that can be eaten whole or the creamy interior extracted and enjoyed separately.
